Origin of the name: Stone wall serving to contain the rainwater that could flood these pronouced slope vineyards.
Grape varieties: Merlot 90% and Tempranillo 10%.
Appellation: DO Utiel-Requena.
Vineyard: Grapes come from the plot “Viña Hormas Merlot” (4.5 ha). Planting pattern 3200 feet per ha. High density and leaf surface treillis. Clayey and lime soil with a lot of river stones. Sustainable and organic viticulture. Altitude: 750 m.
Harvest: Hand harvest in boxes of 10 kg during the second week of September.
Winemaking: Each grape variety is fermented separately with maceration for 3 weeks. Malolactic fermentation in used oak barrels from central France (Boutes), fine-grained and lightly toasted.
Aging: 14 months in the same oak barrels where the malolactic fermentation was done.
Bottling: May, 2023. The wine has not undergone any stabilization treatment to preserve its natural qualities, so decanting is recommended.
Alcohol: 14.5% vol.
Production: 3,600 bottles
Tasting notes: Deep-red colour. The wine’s thick legs come to tint the glass, which gives an idea of its density. The nose is intense and delicate, with hints of wild black fruits, pencils, spices (pepper), vanilla and balsamic notes, all wrapped in a soft touch of fine oak. The palate is smooth, mouth-fulfilling and creamy, very elegant with a great fruity sensation. Right acidity. It is long and pleasant, with great balance. To drink and enjoy now or to hold.
Food pairing: all kinds of meats, blue fishes, spicy stews, semi-soft and aged cheeses, foie gras, pates and cold cuts.
Temp. of service: 16-18ºC
Advice for wine storage: This wine can be kept for a long time, 8 to 12 years, under correct storage conditions (temperature below 15ºC, without direct sunlight neither vibration).
