Grape varieties: Cabernet Sauvignon 50 % and Tempranillo 50%.
Appellation: DOP Utiel-Requena.
Vineyard: Tempranillo comes from the plot called “Viña Norte” (5 ha) and Cabernet Sauvignon, from the one named “El Duende” (4 ha). Planting pattern 2800 vines per ha. High density and leaf surface treillis. Sandy soil with abundance of silt (Tempranillo) and sandy loam soils, active limestone 6% from glacis of the quaternary on clay loams of the tertiary (Cabernet Sauvignon).
Altitude: 715 m (Tempranillo), 680 m (Cabernet-Sauvignon).
Harvest: by hand in small crates of 10 kg from 4th until 9th October (Tempranillo) and from 10thuntil 16th October (Cabernet Sauvignon).
Winemaking: each grape variety is fermented separately. Maceration for three weeks. Malolactic fermentation in second use French oak barrels (225/500L) from the center of France, fine-grained and slightly toasted (Boutes).
Aging: 18 months in the same oak barrels where the malolactic fermentation was done.
Bottling: August, 2018. This wine has not undergone any stabilization treatment to preserve its natural qualities, so decanting is recommended.
Alcohol: 14.5%
Total production: 2352 bottles.
Formats: 75 cl. / 6 or 12 bottles.
Tasting notes: Garnet colour, bright and clean. The nose is intense and dominated by ripe black fruit, spices such as clove and pepper, leather, tobacco and toast. The palate is pleasant, tasty, fleshy, with nice touch of oak well integrated. Silky tannins and good acidity. Long aftertaste.
Food pairing: all kinds of red meats and game, spicy stews, cheeses, foie gras, pates and intense flavored cold cuts.
Temp. of service: 16-18ºC
Advice for wine storage: This wine can be kept for a long time, 8 to 12 years, under correct storage conditions (temperature below 15ºC, without direct sunlight neither vibration).
